Greek Yogurt Lunch Bowl

Greek yogurt lunch bowls are a new concept for lunch that were created exclusively for the 7-Day Kickstart Cleanse by viewer Tamara. Use the base of Greek yogurt to create one of three bowl combinations: dill cucumber, chickpea tomato, and pistachio orange. Greek yogurt for lunch will not only give you a good dose of probiotics, but the protein will help keep you full until dinner.
**Note: This is an approved recipe for the What to Eat When plan.
- 1 cup 2%, plain Greek yogurt
- 1/2 cup diced cucumbers
- 1/4 cup sun dried tomatoes
- pinch of dill
- 1 soft-boiled egg
1. Put Greek yogurt into a bowl. Top with cucumbers, tomatoes, dill, and egg.
2. For alternate flavors: Add 1/2 cup chickpeas, 1/2 cup fresh tomatoes, and salt and pepper to yogurt. Or, add one tablespoon of nut butter, 1/4 cup of pistachios, and 1/2 cup sliced oranges.
