- 2 cups brown rice
- 2 cups edamame
- 1 lb chicken thighs, diced
- 1/2 cup scallions, chopped
- 4 tbsp sesame seeds
- 2 avocados, diced
1. Toss together brown rice, edamame, and chicken thighs in a bowl.
2. Sprinkle bowl with scallions, sesame seeds, and avocado.
