90 Second Greek Omelet

The egg provides protein and the recipe is both low-carb and gluten-free. To eat it on the go, place it on a 100-calorie whole wheat flat bagel.

1 egg
2 tbsp chopped fresh spinach
2 tbsp chopped tomato
2 tbsp feta cheese
pinch oregano
salt
pepper

Spray cooking spray in microwave safe bowl. Scramble egg in bowl and add remaining ingredients. Microwave on high for 60 seconds. Remove from microwave and enjoy!

Variation: Try mixing it up by making it Mexican with corn or Italian with some mozzarella cheese and fresh basil.
