Alex Guarnaschelli’s Slow Cooker Ham

One of Alex Guarnaschelli's favorite holiday hacks is using her slow cooker in unconventional ways. While you may not think of your slow cooker as the first destination for your holiday ham, it actually works. Guarnaschelli says cooking your ham in a slow cooker simmers all the juices and flavors together creating a pot roast with a new name: ham roast! Add all your ingredients and let it cook for 6-8 hours while you prepare the rest of your meal. The best part? It won't take up precious oven real estate when you need it most.

Ingredients

  • 1 6-7-pound bone-in, Hickory smoked, uncured, fully cooked ham
  • 4 large Idaho potatoes, cut into wedges
  • 6 medium carrots, halved
  • 11/2 cups maple syrup
  • ½ cup dark brown sugar
  • 2 cups unsweetened apple juice
  • 3 tbsp Dijon mustard
  • 2 tbsp red wine vinegar

Directions

1. Prepare the slow cooker and ham: Pour 3 cups water in the bottom of a 7-quart slow cooker. Add the ham, cut side up, the potatoes and carrots. Pour the maple syrup, brown sugar and apple juice over the ham. Start on the “high” setting for the first 30-45 minutes.

 

2. Cook the ham: Change to “low” setting, cover with the lid and cook, 3-4 hours, or until tender. Transfer the ham and vegetables to a deep serving platter. Use a pair of scissors to cut the slices of ham off the bone right on the platter. Stir the mustard and vinegar into the cooking liquid and taste for seasoning. Pour the liquid over the ham and vegetables.
