Almond Walnut Truffles

These tasty morsels are a great "pick-me-up" that will help satisfy your sweet cravings. They are full of good protein, minerals and antioxidants. I keep mine in the freezer and whenever my energy runs low I just pop one in my mouth, for a great energy boost and to fulfill my need for sweets.

1 cup walnuts soaked in water 2-3 hours, drained
1 cup almond flour
3/4 cup organic raisins soaked for 1-2 hours in water, drained
1/4 cup cocoa powder
3 tbsp honey
1 tsp lemon zest

Grind the walnuts in a food processor until finely grated.

Add the almond flour and process for a minute until incorporated, transfer to a bowl.

Add the raisins to the now empty processor and finely chop.

With the machine running, add the cocoa powder and honey. Continue processing until quite smooth.

Return the walnut and almond mix to the processor and mix well.

Remove to a bowl. Use palms to form little 3/4-inch balls of the mixture. Refrigerate or freeze in an airtight container.
