Ingredients

  • 1 firm, tart apple
  • 3 celery stalks
  • 1 medium fennel bulb
  • 1 tsp fennel seeds
  • 1 tsp celery seeds
  • pinch of salt
  • juice and zest of 1 organic lime
  • 1 tbsp walnut oil (grapeseed oil or any other mild tasting oil is fine too)

Directions

1. Cut the apple into quarters and then slice the pieces very thinly lengthwise. Slice the fennel the same way and prepare the celery by cutting the stalks very thinly crosswise. Toss the apple, fennel, and celery with the fennel seeds and celery seeds, salt lime juice, zest, and oil.
