Similar to guacamole but easier to spread, this bright avocado aioli is flavored with both lemon juice and lemon peel for a strong citrus kick. Try it as a topping for flax-crusted tuna burgers.
- 1 medium avocado, halved, seeded, and peeled
- 2 tbsp light mayonnaise
- 1/2 tsp finely shredded lemon peel
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1/8 tsp salt
1. Using a fork, mash together avocado, mayonnaise, lemon juice, garlic, salt, and pepper in a bowl until slightly chunky.
2. Use immediately as a topping on burgers or sandwiches.
