Baked Halibut

Enjoy a relaxing dinner with this baked halibut recipe. Serve along with your favorite starch and vegetable for a delicious and nutritious meal. 


  • 8 oz fresh halibut fillets
  • 2 oz cherry tomatoes
  • 2 oz mixed bell peppers, diced
  • 2 oz artichokes, blanched and sautéed
  • 2 tbsp spring onions, diced
  • 2 tbsp thyme and basil, chopped
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lemon and zest


1. Preheat oven to 375° F.  


2. Section all ingredients into four equal portions. Arrange each portion on an individual piece of parchment paper: fold the sides up to prevent juices from dripping.  


3. Coat baking sheet with cooking spray and arrange parchment paper parcels on the sheet. Place in the middle oven rack to prevent for burning.


4. Bake for 15-20 minutes. When ready, open cautiously to prevent burn from the steam. Serve with steamed rice or baked potatoes.
