Guest Sophia shared her favorite banana bread recipe using alternative sweeteners. Stevia is a healthier sweetener because it comes from a plant and is less processed. When added into baked goods it still sweetens as sugar would without the added calories and negative health benefits.

Recipe from Whole Earth Sweetener Co. 


1/4 cup butter, softened
1/2 cup equal parts stevia and monk fruit
5 packets zero-calorie sweetener
3/4 cup mashed overipe bananas
1/4 cup buttermilk
1 egg
1 tsp vanilla extract
1/4 tsp banana extract
1 1/4 cups plus 2 tbsp all-purpose flour
3/4 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
3 tbsp chopped pecans, divided
1 tbsp chopped walnuts

1. Preheat oven to 350°F. Spray 8-1/4 x 4-1/2-inch loaf pan with cooking spray; set aside.

 

2. Beat butter, stevia and monk fruit, and sweetener packets until combined.

 

3. Beat in bananas, buttermilk, egg, and extracts until blended.

 

4. Stir in dry ingredients, 2 tablespoons of the pecans and the walnuts. Spoon batter into prepared pan.

 

5. Sprinkle remaining 1 tablespoon pecans over the top. Bake 50 to 60 minutes or until wooden pick inserted near center comes out clean. Let bread cool in pan 10 minutes. Carefully remove bread and cool completely on wire rack.
