1 cup canned cannellini beans, drained and rinsed 10 oz diced red beets 1/2 cup milk 1 small English cucumber, diced 1/2 cup chopped fresh dill, plus more for topping juice of 1 lemon 2 tbsp freshly grated horseradish, plus more for topping 4 tbsp sunflower seeds
1. Combine all ingredients in a blender and process until smooth.
2. Top with additional horseradish and sunflower seeds when serving.
