3 tbsp grapeseed oil 1 cup chopped onions 1 large sweet potato, diced 1 cup diced carrots 1 cup corn 1 tbsp chopped garlic 3/4 cup tomato juice 1 (15-oz) can fire-roasted tomatoes 1 (15-oz) can black beans 1 1/2 tsp chili powder 1 1/2 tsp ground cumin pinch of salt freshly ground pepper
In a large pot, heat oil. Cook onions, stirring, until softened, about 5 to 7 minutes.
Stir in sweet potato, carrots, corn, garlic, tomato juice, fire-roasted tomatoes, black beans, chili powder, cumin, salt and pepper and simmer for about 25 minutes. Serve and enjoy!
