- 1/2 cup corn
- 1/2 cup black beans
- 1/2 cup tri-color peppers
- 1/2 cup onions
- 1/2 cup brown rice
- 1/2 cup red beans
- 1/2 cup green scallions
- avocado (for garnish)
1. Lightly pulse corn, black beans, tricolor peppers, onions, brown rice, red beans, and green scallions in food processor.
2. Form 4-6 oz patties (about the amount that can fit into an ice cream scoop) and place on cookie sheet lined with parchment paper.
3. Bake at 380°F for 8-10 minutes. Garnish with avocado slice and enjoy!
