Carrot-Zucchini Turkey Meatballs

  • 1 lb ground turkey
  • 3/4 cup finely grated carrots
  • 3/4 cup grated zucchini
  • 1/2 cup cooked quinoa
  • 1/2 cup chopped scallions
  • 1/4 cup chopped parsley
  • 1 tbsp Sriracha sauce
  • 2 tsp soy sauce
  • 1 clove garlic, finely chopped
  • 1/4 cup grated parmesan
  • freshly ground pepper
  • 2 tbsp olive oil (for frying the meatballs)


1. Preheat oven to 400°F. 


2. In a large bowl, gently combine all ingredients. Form about 1 1/2-inch meatballs (about 14). 


3. In a large oven-proof skillet, heat the oil and brown the meatballs on all sides. Then transfer to the oven and bake for about 15 minutes—until a thermometer indicates they're 165°F.
