Cauliflower Tacos

Satisfy your taco craving by making this healthy alternitive with cauliflower instead of ground beef. These tacos are a great choice for vegeterians and people who are trying to eat healthier. This super easy dish can be made in just under 30 minutes!

3 cups riced cauliflower
3 medium mushrooms (white or cremini)
1/2 tsp garlic powder
1/2 tsp onion powder
2 tsp chili powder
2 tsp ground cumin
1 tsp smoked paprika
salt, to taste
pepper, to taste
lettuce cups
chopped tomatoes (optional)
non-dairy shredded cheese (optional)
salsa (optional)
avocado slices (optional)
non-dairy sour cream (optional)

1. Add mushrooms to a food processor. Pulse of few times until they have a similar consistency as cauliflower. 

 

2. Heat a large pan over medium heat.

 

3. Add cauliflower, mushrooms, cumin, smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper into the pan. Stir until well combined. 

 

4.  Continue to cook mixture over medium heat for 15 minutes, stirring frequently. 

 

5. Remove from heat and set mixture aside. 

 

6. Add cauiflower mixture into lettuce cups. Garnish with toppings like chopped tomatoes, non-dairy shredded cheese, salsa, avocado slices, and non-dairy sour cream.
