Chee-Z Cauliflower Mash

Put your mom's mashed potatoes and gravy to shame with this guilt-free alternative. This recipe is a healthy version of an old favorite that combines nutritious cauliflower with pine nuts, the cheesy flavor of nutritional yeast, and many other delicious flavors. Help yourself to a serving, or two, of this decadent dish.

3 cups chopped cauliflower
1/4 cup pine nuts
juice from 1 lemon
1 garlic clove, peeled
2 tbsp filtered water
2 tbsp nutritional yeast
2 tsp chopped chives
1 tsp fresh thyme
crushed red pepper, to taste

1. Combine all the ingredients in a blender and pulse until smooth. (Or feel free to keep this dish a bit chunky, if you prefer!)

 

2. Scoop into a bowl and add crushed red pepper.

 

NOTE: If you’d like to add more nutritional yeast for more chee-z flavor, go for it!
