Chicken and Rice

  • 2 lbs boneless, skinless chicken breast
  • 2 tbsp lime juice
  • 1 1/2 cups brown rice
  • 15 oz tomato sauce
  • 2 tsp olive oil
  • 1 cup water
  • 16 oz frozen peas
  • 2 tbsp fresh cilantro


1. Place chicken, rice, tomato sauce, lime juice, oil and water in a large pot over medium heat. Bring mixture to a boil.


2. Cover the pot and reduce heat to low. Simmer for 20 minutes, stirring occasionally.

3. Stir in peas, cilantro, salt, and pepper. Let cook 5-10 more minutes or until rice is tender.
