Chocolate Chip Peanut Butter Cookies

Chocolate chip cookies are delicious but they can be high in calories. Swap out some of the excess fat by using mashed bananas instead of butter. Julia Collin Davison from America's Test Kitchen recommends swapping one banana for every one stick of butter to cut down on half the calories and a third of the fat.

1/2 mashed banana
1/2 cup peanut butter
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 tbsp light corn syrup
2 tbsp water
2 tsp vanilla extract
2 1/2 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 cups chopped semi-sweet chocolate

1. Preheat oven to 375°F. 

 

2. Mash half of a banana in a large bowl. Add the peanut butter and sugar and mix together. Beat the eggs into the mixture one by one and then add in the corn syrup, water, and vanilla. 

 

3. In a separate bowl, mix together the flour, baking soda, and salt. Slowly combine the dry ingredients into the wet. Add chocolate chunks. 

 

4. Roll balls of the cookie dough onto baking sheets and bake for 12 to 14 minutes until golden brown.
