These days, barbecue foods aren't reserved for just summer cookouts anymore. While Daphne Oz's recipe for juicy and tender pulled pork tastes as if it's been slowly roasting for hours on end, the meat takes just over an hour in this pressure cooker to reach peak perfection. Since the meat component of the hearty sandwich is cooked with little oil and a small amount of low-sugar tomato paste, you won't regret reaching for seconds. Just don't forget to grab a napkin!

- 2 tbsp light brown sugar
- 1 tbsp paprika
- 1 tsp mustard seed
- 1 tsp chili powder
- 1 3 1/2-4 lb boneless pork shoulder
- kosher salt and cracked black pepper, to taste
- 1 tbsp vegetable oil
- 1 cup water
- 1/2 cup apple cider vinegar
- 2 tbsp tomato paste
- 1 cup barbecue sauce, for serving
- 2 packages of potato buns, sandwich size
- 1 cup bread and butter pickles, for serving
- 3 cups coleslaw, for serving
- hot sauce, optional, for serving
1. Combine the spices in a small bowl and set aside. Cut the pork into 6 equal pieces and season with salt and pepper. Rub the spices onto each piece of pork.
2. Place the Instant Pot® on the highest sauté setting. Pour the oil into the Instant Pot® and when hot add two to three pieces of the pork. Brown on all sides and remove to a plate. Sear the remaining pieces of pork, set aside.
3. Change the Instant Pot® to the warm setting, add the water, apple cider vinegar, and tomato paste, and whisk to combine. Add the pork and all of the juices back to the pot. Follow the instructions to lock the lid. Set the pressure cooker on high for 1 hour.
4. When the pork is ready, follow the instructions for the quick release and wait for the cycle to finish. Unlock and remove the lid, being careful of any remaining steam. Transfer the pork to a platter and shred. While shredding place the Instant Pot® back onto the sauté setting and reduce the liquid in the bottom of the pot by half, this should take about 10 minutes. Add the reduced liquid to the pulled pork and build your sandwiches.
5. Place a mound of pulled pork onto the bottom half of a potato bun. Add the barbecue sauce, some pickles, coleslaw, and hot sauce if you like it a little spicy.
