Dr. Davis’ Triple-Berry Quick Muffin

If you are in a hurry, this muffin recipe is perfect. It takes only 10 minutes to make and because it’s grain and gluten free, it’s healthy too. Try adding different toppings according to your mood to mix it up. Use Dr. Davis' all-purpose baking mix for this delicious breakfast recipe.


  • 2 1/2 oz all-purpose baking mix
  • 1/4 tsp ground cinnamon
  • 1 tbsp sweetener equivalent to sugar
  • pinch sea salt
  • 1 egg
  • 2 tbsp milk
  • 1 tbsp butter, melted
  • 2 oz frozen or fresh mixed berries


1. In a medium bowl, combine the baking mix, cinnamon, sweetener, and salt. Whisk in the egg.


2. Add the milk, butter, and berries and whisk thoroughly. Use a rubber spatula to scrape the mixture into a large mug or a 10-ounce ramekin.


3. Microwave on high power for 2 minutes, or until a wooden cocktail stick inserted in the center comes out clean. If you’re using fresh berries, microwave for 1 ½ minutes.


4. Allow to cool for 5 minutes.


Makes one muffin.
