1/2 cup quinoa
1 cup water
1/2 cup frozen edamame
1 cup kale
1/4 cup sun-dried tomatoes
2 tbsp balsamic vinegar
1 tbsp olive oil

Place quinoa in a pot with water, frozen edamame and kale. Bring to a boil and reduce heat. Cover and simmer for 15 minutes. Add sun-dried tomatoes. Season with balsamic vinegar and add olive oil.
