Dr. Mark Hyman's Blueberry Soft Serve

Everyone loves ice cream, but it's sometimes hard to rationalize including it in a healthy diet - until now! This soft serve recipe contains antioxidants, will actually fuel you and give you energy, and even contains cholesterol-lowering ingredients! It will provide delicious flavor and nutrition for your entire family this spring.

4 cups frozen blueberries
1/2 cup full-fat coconut milk
1/4 cup coconut oil
2 tbsp basil leaves, minced
1 tbsp honey (optional)
zest of 1 lime
1/2 tsp alcohol-free, gluten-free pure vanilla extract
4 tbsp bee pollen, for garnish

1. Combine half of the blueberries, coconut milk, oil, basil, honey (if using), lime zest, and vanilla in a blender, and blend on high, using the tamper to push the berries down toward the blade.

 

2. Process until the mixture is smooth, thick, and creamy, about 1 minute.

 

3. Transfer the mixture to a large bowl and place the bowl in the freezer.

 

4. Repeat with the other half of the ingredients (except the bee pollen) and add to the first batch. Keep the first batch in the freezer only while you're making the second batch.

 

5. Scoop the ice cream into 4 bowls.

 

6. Sprinkle each portion with 1 tablespoon bee pollen.

 

7. Serve immediately.
