You don’t need tons of time to cook healthy. Two Dr. Oz viewers and guests of the show, Barbara Clarke and Jessica Mack, share their mouth-watering recipes that you can make in just a few minutes in the microwave.
2 pre-cooked sliced chicken breasts 1 tbsp lime juice 1/4 cup (60 ml) extra virgin olive oil 1 tsp garlic powder Sea salt Black pepper 1 can black beans (drained) 1 tsp lime juice 1 tsp garlic powder 1/4 tsp sea salt 1 cup shredded low-fat Mexican cheese
Place chicken in a large bowl. Add the lime juice, olive oil, garlic powder, salt and pepper and toss until the chicken is well coated. Allow chicken to marinate while preparing the remainder of the dish.
Pour beans, lime juice, garlic powder and salt into the food processor then process until smooth. Toss cheeses, lime juice and cilantro in large bowl.
Remove chicken from marinade and shred.
Place tortillas on a flat work surface. Spread a thin layer of bean mixture on each tortilla, sprinkle with cheese and top with shredded chicken. Place a second tortilla on top to complete the quesadilla.
Microwave quesadillas for 50-60 seconds. Remove quesadillas from microwave and garnish with avocado.
