Earl Grey Tea and Apple Baked Oatmeal

Chef Will Gilson says that tea has so much untapped potential when it comes to cooking. We all have it lying around at home but we never think to use it outside the kitchen. Since tea imparts tons of flavor and health benefits, it's never a bad idea to throw some into your usual recipes. Take your baked oatmeal to new heights with the addition of Earl Grey tea, which will add a delicious spice to your breakfast recipe.


  • 4 Golden Delicious apples, peeled, cored, chopped into 1/2-inch pieces
  • 1 1/2 cups of rolled oats
  • 1/2 cup light brown sugar
  • teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 large egg
  • 2 cups whole milk
  • 2 tablespoons loose Earl Grey tea
  • 1/2 cup pecans, chopped
  • 2 tablespoons unsalted butter, melted, plus extra for greasing the baking dish


1. Move oven rack to middle position and preheat oven to 350°F. Lightly grease a shallow 2-quart baking dish. Spread apples into dish and cover with foil. Bake until apples are just beginning to soften, about 20 minutes.


2. Meanwhile, heat the milk to a simmer and then add the earl grey tea. Remove from heat and allow to steep for 15 minutes. Pour through a strainer and reserve.


3. Remove foil and let the apples cool slightly. Evenly spread oats and pecans into dish. Whisk brown sugar (reserve about 2 tablespoons), salt, cinnamon, egg, tea-infused milk, and melted butter in medium bowl to combine. Pour into baking dish. Using a rubber spatula, gently press and stir oats into milk mixture to distribute apples evenly.


4. Spread remaining 2 tablespoons brown sugar over top and bake until center is just set, about 30 minutes. Serve immediately.
