Easy Artichoke Bean Frittata

Frittatas are great to make on the weekend and split up for quick weekday breakfasts.

3 tbsp olive oil
1 oz frozen artichoke hearts, defrosted
pinch of red pepper flakes
2 cloves garlic thinly sliced
1 cup cooked brown rice
1/2 scallions, reserve some for garnish
5 eggs
1/2 cup shredded mozzarella
1 tsp ground cumin
1 cup sliced onions
1 cup black beans

Cook ingredients covered over low heat for about 8 to 10 minutes.

Run under broiler, if desired, for a minute.

Yields 5 servings.
