Edamame Pasta Carbonara

Italian grandmother Carmela's traditional spaghetti dish is getting a new look with the help of edamame noodles. Full of fiber, protein, and vitamins, edamame may also help lower cholesterol and blood sugar levels. Swap your traditional pasta noodles with edamame the next time you're craving comfort food but want the health benefits of soybeans at the same time. 

Ingredients

  • 1 1/2 lbs edamame spaghetti
  • 1 lb ricotta
  • 8 oz shredded mozzarella
  • 1/2 cup grated cheese
  • 3 sweet sausage links
  • 1/2 lb homemade soppressata or salami
  • 5 scrambled eggs

Directions

1. Cook pasta in 6 quarts of water with 2 tablespoons of salt.

 

2. Boil the pasta and run it under cold water when done. 

 

3. Mix ricotta, shredded mozzarella, grated cheese, and soppressata.

 

4. Cut the sausage in little cubes and add it to the mix.

 

5. Mix cooked pasta with 5 scrambled eggs. 

 

6. You need two frying pans. Put half of the pasta in one pan and put filling on top.

 

7. Put the other half of the pasta in another pan.

 

8. Flip them over and serve.
