2 tbsp olive oil 1 cup cubed turkey ham 2 garlic cloves, crushed 1/2 medium onion, chopped 1 cup shredded Brussel sprouts 1 cup tomatoes, chopped 1 pinch salt and pepper 1 tsp dried thyme 4 oz Gouda cheese, cubed 4 eggs, beaten
Preheat oven to 375°F
Heat olive oil in a skillet and fry the turkey ham until browned, about 2 minutes. Stir in the garlic and onion and sauté for another 2 minutes. Next add the shredded Brussels sprouts and continue sautéing for another 2-3 minutes.
Then stir in the chopped tomatoes. Season with salt, pepper and thyme. Transfer mixture to a buttered baking dish or pie plate. Next mix in the cubed Gouda cheese, and then pour in the the beaten eggs.
Bake for 20 minutes or until firm. If you like, egg whites can be used instead.
