3 cups cooked farro 1 cup English cucumber, diced 1 large red onion, diced 4 tomatoes 2 green peppers, diced 1 medium full head of fennel, diced 1/2 cup mint 2 lemons, squeezed 1 pinch salt 2 tbsp extra virgin olive oil
In a large bowl combine all ingredients and mix well.
Serve salad after letting it sit for one hour, allowing the flavors to marinate.
