3 tbsp chopped chorizo sausage 1/4 cup black beans, drained and rinsed 3 tbsp salsa 2 eggs 2 tbsp grated manchego or jack cheese pinch of salt ground pepper 1/3 cup diced avocado 3 baked tortilla chips cilantro oil to grease ramekin
Preheat oven to 400°F.
Grease a 10-ounce ramekin with oil.
Cover the bottom of the ramekin with sausage, followed by the beans and then 2 tablespoons of the salsa.
Crack the eggs over this and sprinkle with salt and pepper. Top it off with cheese and the rest of the salsa. Bake for about 10 minutes, until the eggs have achieved your texture.
Serve topped with the avocado and the corn/tortilla chip. Sprinkle with a little cilantro if desired.
