Geoffrey Zakarian’s Pesto Vinaigrette

Chef Geoffrey Zakarian’s pesto vinaigrette proves that pesto isn't only reserved for your pasta. Now, your salad bowl can have the same nutty-basil flavor with the added health benefits of monounsaturated fats, like olive oil. You can also try this vinaigrette on a hearty grain bowl.

2 tsp prepared pesto
Juice of one lemon
2 tbsp extra-virgin olive oil
1 tsp ground pecorino cheese
kosher salt, to taste
black pepper, to taste

1. Whisk together pesto and lemon juice.

 

2. Slowly stream in olive oil while whisking, until vinaigrette is uniformly emulsified.

 

3. Add Pecorino cheese, salt, and pepper.

 

4. Stir to combine. Enjoy with a hearty grain bowl.
