Add matcha powder into your breadcrumb mix for a vibrantly green and healthy dinner. Matcha is currently a super trendy ingredient, and for a good reason. Similarly to green tea, it's high in antioxidants and calming properties.
1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
2. In a small bowl, whisk together the soy sauce, orange juice, zest, sesame oil, rice vinegar, and agave to make the dipping sauce. Set aside to allow the flavors to marinate while you prepare the chicken.
3. In a pie plate or shallow bowl, mix together the breadcrumbs and matcha powder. In a separate shallow bowl, mix together the flour and 1/2 teaspoon salt. Put the beaten eggs in a third shallow bowl. Working with one tender at a time, dredge the chicken in the seasoned flour, then the egg, followed by the matcha breadcrumbs. Place the tenders on the prepared baking sheet. Bake tenders for 10 minutes or until lightly golden and cooked through. Sprinkle with the remaining 1/2 teaspoon of salt.
3. Serve with the dipping sauce on the side.
