Gluten-Free Hot Brown Rice, Nuts and Flax

Though brown rice may not sound like your typical breakfast, you will quickly see why this is a delicious and satisfying way to start your day.

1/2 cup brown rice, long grain
1 cup unsweetened soy milk
1/4 tsp ground nutmeg
8 Brazil nuts, chopped
2 tbsp flaxseeds, ground
Pinch of sea salt

Place brown rice, soy milk and nutmeg in a 2 quart saucepan. Bring to a boil, stirring frequently. Cover pan and simmer on low heat for approximately 45 minutes. Top with chopped Brazil nuts and ground flaxseed.
