Grilled Lemon Monkfish

Monkfish is low in calories but high in nutritional benefits. Each serving has a lot of protein in it to help with muscle growth and help to sustain energy. 

4 monkfish fillets
2 lemons, juiced
1/4 cup olive oil
1 tsp sea salt

Place the fish into a shallow bowl. Cover with the lemon juice and olive oil, sprinkle with salt.

 

Marinate for about 20 minutes -- no longer than 30 minutes or the acid from the lemon juice will "cook" the fish. While the fish is marinating preheat the grill.


Pat the marinated fillets dry, then place on the grill grates and cook on medium heat for about 5 to 7 minutes per side.


Serve with a few wedges of lemons on the side.
