Homemade Italian-Style Sausage

Don't worry about sausage casings anymore, just make your own sausage at home. This quick and easy recipe from Julia Collin Davison of America's Test Kitchen is so delicious you won't even miss store-bought sausage. 


  • 2 tbsp water
  • 1 tsp sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp baking soda
  • 1 lb ground meat
  • 1 tbsp extra-virgin olive oil
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp fennel seeds, crushed between fingers
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes


1. Combine water, sugar, salt, garlic powder, onion powder, and baking soda in small bowl and stir to dissolve. Sprinkle mixture over meat in bowl and toss to combine; set aside for 15 minutes.


2. Meanwhile, combine oil, paprika, oregano, fennel seeds, black pepper, and pepper flakes in separate bowl. Microwave spice mixture at 50 percent power until fragrant, 30 seconds to one minute.


3. Add spice mixture to ground meat and work with rubber spatula until evenly combined. Shape meat into patties or links and cook as desired.
