Hungry Girl's Chinese Chicken Salad

Broccoli slaw is not usually on people's grocery lists but it should be. This low-calorie mix is both nutritious and delicious. Try out this chicken salad recipe or get creative and customize the slaw with your own ingredients.

1 16 oz package dry broccoli cole slaw
1 8 oz can sliced water chestnuts, drained
1 cup canned mandarin orange segments packed in juice (or light syrup), drained and chopped
1 cup chopped scallions
12 oz cooked and chopped skinless lean chicken breast
3/4 cup low-fat sesame ginger dressing

1. Combine all ingredients in a large bowl and mix well. 

 

2. Top with dressing and toss to coat. Enjoy!
