Hungry Girl's Sheet-Pan Chicken Fajitas

Enjoy this healthy and easy-to-make take on chicken fajitas! Using only one sheet pan, this recipe is easy to clean up and tastes great. You can serve them with tortillas, or lettuce wraps for an even healthier meal.

2 tsp olive oil
1 1/2 tsp lime juice
8 oz raw boneless skinless chicken breasts, cut into strips
2 cups sliced bell peppers
1 cup sliced onion
2 tbsp chopped fresh cilantro
2 tsp taco seasoning

1. Preheat oven to 400°F. Spray a baking sheet with nonstick spray.

 

2. In a large bowl, use a fork to whisk oil with lime juice. Add chicken, veggies, and seasoning, and toss to coat.

 

3. Transfer to the baking sheet. Bake for 10 minutes.

 

4. Flip/rearrange chicken and veggies. Bake until chicken is cooked through and veggies are tender, about 10 minutes.

 

5. Top with cilantro.
