A delectable blend of flavors and textures, this recipe is the perfect accompaniment to your favorite dishes. The addition of tahini turns this side dish into a great source of calcium, magnesium, and iron which will keep your energy levels high.

Ingredients

  • 2 tbsp mixed raw seeds
  • 1/2 garlic clove
  • 1 lemon
  • 10 oz mixed- color carrots
  • 2 crunchy eating apples

Directions

1. Toast the seeds in a dry non-stick frying pan on medium heat until lightly golden, tossing regularly, then remove.

 

2. Put three-quarters of the seeds into a mortar and pestle with a pinch of sea salt, and pound until fairly.

 

3. Peel and add the garlic, then mash to form a paste.

 

4. Squeeze in the lemon juice, then muddle in 1 tablespoon of extra virgin olive oil and a tiny dribble of red wine vinegar to make a delicious tahini-style dressing.

 

5. Wash the carrots, then finely slice into matchsticks with good knife skills or using the julienne cutter on a mandolin (use the guard).

 

6. Core and slice the apples the same way, then toss both with the tahini dressing.

 

7. Taste, season to perfection with salt and black pepper, then scatter over the remaining seeds.
