Jamika Pessoa’s Crispy Roasted Chicken

The next time you want a crunch to your meal try making Jamika Pessoa's crispy roasted chicken. This recipe is will leave your dinner cravings completely satisfied. Even though this meal is low in carbs and high in protein, it's so tasty you will feel like you are cheating your diet.

Ingredients

  • 1 (3-3 1/2) lb chicken
  • 2 tbsp kosher salt
  • 2 tsp baking powder
  • 1 tsp cracked black pepper
  • 1 lemon, sliced
  • 1/2 yellow onion, cut into wedges
  • 5 cloves garlic, smashed
  • 5 sprigs, thyme
  • 2 tbsp olive oil

Directions

1. Remove the chicken from the fridge 12 to 24 hours before you want to roast it and pat dry with a paper towel. 

 

2. Combine the salt, pepper and baking powder and rub them all over the skin of the chicken. Place the chicken onto a baking sheet fitted with a rack. 

 

3. Place the chicken back into the fridge on the bottom shelf, uncovered. When you are ready to cook the chicken, pat it dry it a paper towel once more.

 

4. Preheat the oven to 400°F.

 

5. Stuff the chicken with the lemon, onion, garlic, and thyme. When the oven is hot, drizzle the chicken with olive oil and place into the oven at 400°F for 30 minutes. 

 

6. Turn the oven down to 350° and continue to roast for another 45 minutes to an hour, until the internal temperature reads 165°F.

 

7. Remove the chicken from the oven and let it rest for 20 minutes. Carve and serve.
