Jorge Cruise's Berry-Kiwi Parfait

Blending fruit and protein is one of the smartest ways to fill up. Coconut yogurt is a great protein to use as a base since it has no dairy and is full of antioxidants. Combining it with fruits makes it filling, delicious, and the best way to start your day.

1/2 cup unsweetened coconut yogurt
2 tbsp lemon juice
1 tbsp lemon zest
1/4 cup granola
1/2 cup blueberries
1/2 cup kiwi, chopped
fresh mint for garnish

1. In a small bowl, mix together coconut yogurt, lemon juice, and lemon zest.

 

2. Put half of the granola in bottom of a serving glass.

 

3. Layer yogurt, fruit, and the remaining granola.

 

4. Top with mint leaf and enjoy!
