5 oz roast pork tenderloin
2 cups cooked carrots
1/2 baked potato
2 tbsp low-fat Greek yogurt or light sour cream
2 tbsp salsa (optional)

1. Preheat oven to 450°F.

 

2. Season pork with preferred seasonings, like salt, pepper, and fresh rosemary.

 

3. In a large skillet over medium-high heat, heat olive oil or vegetable oil. Add garlic and sauté.

 

4. Put tenderloin in the pan and sear each side, about 10 minutes.

 

5. Transfer meat to a roasting pan and bake, about 20 minutes.

 

6. When done, slice and plate with a dollop of Greek yogurt or sour cream and fresh salsa.

 

7. Serve tenderloin with cooked carrots and baked potato.
