  • 2 cups mixed greens
  • 5 oz protein (chicken, turkey, salmon, shrimp, or tofu)
  • 1/2 cup beans
  • non-starchy veggies (unlimited amount)
  • 1 tsp olive oil
  • vinegar
  • fresh lemon juice


1. Add mixed greens, protein, and an unlimited amount of non-starchy vegetables in a bowl. 


2. Top with olive oil and as much vinegar as you want, or olive oil and fresh lemon juice and toss until well-mixed. You can use two tablespoons of low-calorie vinaigrette for dressing if you prefer.
