Kristin Cavallari’s Almond Butter Sugar Cookies

Oat flour is a great gluten-free alternative to regular white wheat flour. Plus, it's healthier and lower in sugar content making it the perfect baking substitute for people with diabetes.


  • 1 stick unsalted grass-fed butter, softened
  • 1 cup coconut sugar
  • 1/2 cup almond butter
  • 1 large egg
  • 1 1/2 cups oat flour
  • 3/4 tsp baking soda
  • 1/2 tsp pink Himalayan salt


1. Preheat the oven to 350°F. Line two baking sheets with parchment paper. 


2. Using a handheld or stand mixer, cream together the butter, sugar, and almond butter until fluffy. Add the egg and mix to combine.


3. In a separate bowl, mix the flour, baking soda, and salt with a spoon. Add the dry ingredients to the wet ingredients and mix well. Spoon tablespoon-size balls onto the prepared baking shets, keeping a little distance between each ball. Bake for 10 minutes, or until they start to turn golden brown. The cookies are thin, so keep a close eye on them so they don't burn.
