1 lb ground turkey breast
1 small onion
3 tbsp tomato paste
1/4 cup whole grain breadcrumbs
1 large egg
1/2 cup cooked brown rice
1 tbsp parsley
1/2 tsp salt
2 cloves of garlic
1/4 tsp ground black pepper
1/2 cup shelled edamame soy beans
1/2 cup boiled potatoes
1/8 cup 1% milk
dash of dill, salt, and pepper
1 tsp paprika
1 tsp garlic powder
Lean Turkey Meatloaf: Preheat the oven to 350°F. Mix all ingredients in large mixing bowl. Use your hands to completely combine everything. Spray a cookie sheet with cooking spray. Place all of the meat mixture on the cookie sheet, and shape it into a long rectangle. Pat it down to make sure that it will hold its shape while baking. Cover the meatloaf with aluminum foil, and bake, covered for approximately 35-45 minutes.

\r\n\r\nMashed Potatoes: Mash boiled potatoes in a large pot, add in the milk, salt, dill, pepper, paprika and garlic powder. Mash and mix the mashed potatoes until desired consistency. Enjoy!
