It's time to upgrade your basic salt and pepper routine with lemon zest. The zest is concentrated with flavor so you don't have to use as much salt to spice up any savory dish.
- Zest of 6 lemons
- 1/4 cup whole peppercorns
- 1 tbsp sea salt
1. Spread lemon zest on a baking sheet and let it dry, either on the lowest oven temperature or just air dry for a few hours.
2. Combine the zest, peppercorns, and salt in a spice grinder and process until you reach your desired consistency.
3. Store in a glass jar in the refrigerator.
Yields about 1/2 cup.
