Trying to cut down on carbohydrates in your diet, but still craving a cheesy slice of pizza? Get all the satisfying flavor of a classic pie without the thick, carb-loaded crust with these easy pizza bites!
1 large zucchini, sliced into thin rounds olive oil cooking spray Kosher salt and freshly ground black pepper, to taste 1 (15 oz) can natural/sugar-free tomato sauce 1/2 cup shredded mozzarella cheese 1/2 tsp crushed red pepper flakes (optional) fresh basil leaves, for garnish other toppings as desired (optional)
1. Preheat oven to 375°F.
2. Slice zucchini into rounds. Place zucchini slices onto a large sheet pan and spray with olive oil cooking spray; toss to coat.
3. Lay out zucchini slices in a single layer on the prepared baking sheet.
4. Top each zucchini round with about 2 teaspoons tomato sauce, sprinkle with mozzarella cheese and crushed red pepper flakes (if using). Add additional toppings if desired.
5. Bake pizza bites for about 20 minutes, or until zucchini is tender and mozzarella is melted. Serve immediately.
