Mac and Cheese

Not only does this recipe include the delicious flavors of a classic dish, it also incorporates tons of cauliflower. Hidden among the cheesy noodles are vitamins, nutrients and added thickness. This is a perfect dish for the whole family. You will feel good about serving your kids this dish and they will have no idea it's so good for them. 


  • 16 oz dried elbow pasta
  • 1 lb steamed cauliflower
  • 7 oz shredded cheddar cheese
  • 7 oz shredded mozzarella cheese
  • 3/4 cup milk
  • parmesan (for topping)
  • breadcrumbs (for topping)


Bring pot of water to a boil and add pasta.

Cook until desired doneness is achieved. 

Puree cauliflower, cheddar cheese, mozzarella and milk.

Combine pureed mixture with cooked pasta and place in a baking dish. 

Sprinkle with breadcrumbs and parmesan cheese and bake at 350 F for 25 minutes.
