Mark Bittman's Grape and Ricotta Salad

This naturally sweet dish will keep you satisfied for a long time. By adding the grapes, this recipe can double as a dessert as well. And if you want to make it even healthier, substitute the ricotta with white beans.

1 1/2 cups brown rice
2 1/2 cups water
1 cup ricotta
1 cup grapes, halved
1/4 cup chopped basil
1 tbsp chopped shallot

1. Combine brown rice with water over high heat.

 

2. Bring to a boil, lower the heat and cook until the water evaporates and the rice is tender, about 40 to 45 minutes.

 

3. Chill the rice.

 

4. Add the ricotta cheese, grapes, basil, and shallots.

 

5. Mix and serve.
