Mind Kind Key Lime Pie

Looking for a totally guilt-free dessert? This pie is based on avocados and nuts, and also free of refined sugars. Nuts like the walnuts and cashews in this recipe are a good source of healthy unsaturated fats which have been shown to reduce your risk of Alzheimer’s.

1 cup packed medjool dates, pitted (pitted before measuring)
1 ½ cup raw walnuts
Pinch sea salt
1 cup raw cashews, soaked for 4-6 hours (or better overnight), then drained
¼ cup almond milk, sugar-free
¼ cup safflower oil
1 small ripe avocado, pitted and peeled, yielding about ½ cup of avocado flesh
3-4 large limes (1 Tbsp zest, 1⁄2 cup juice)
1/3 to 1⁄2 cup erythritol (depending on preferred sweetness)

1. Place the dates into a food processor and blend until chopped into small pieces – it will clump into a ball. Remove and set aside.

 

2. Next, add nuts and process into a meal. Then add dates back in and pulse until a loose dough forms - it should stick together when you squeeze a bit between your fingers. If it's too dry, add a few more dates through the spout while processing. If too wet, add more almond or walnut meal. Add a pinch of salt to taste.

 

3. Distribute the dough evenly among 6 flat-bottomed small dessert cups, or 4-ounce mason jars, and press down with your fingers or a spoon to flatten. Set aside.

 

4. For the filling, add all the ingredients to a blender and blend on high until creamy and smooth (preferably a Vitamix blender). Depending on the power of the blender, this may take between 3 to 5 minutes. Taste and adjust flavor as needed, adding more lime zest/juice for more tartness or more erythritol for sweetness.

 

5. Pour filling into the dessert cups and tap on counter to release air bubbles. Top with a touch of lime zest (not too much as the bitterness will overwhelm) and cover with the jar lid or cellophane wrap if using dessert cups.

 

6. Freeze for 2 to 4 hours or until firm. Remove from the freezer for 15-20 minutes at room temperature to thaw before serving.
