

Chef Ming Tsai’s quick and easy salad recipe features an underrated and super-nutritious veggie – watercress! While kale is a trendy salad addition, it doesn't always work well in a mixed salad because you have to sauté it or pour more dressing on to make it soft. Watercress plays well with other ingredients because of its complementary pepper-like flavor. Plus, watercress has one-quarter of the calories of kale! Ingredients
- 1 1/2 cups watercress
- 1 tbsp extra-virgin olive oil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1/2 lemon
Directions
1. Toss the watercress with the olive oil, Kosher salt, and pepper in a large bowl.
2. Finish off with a squeeze of fresh lemon juice over the salad.
