The Monday Dieter Egg and Avocado Salad

Full of healthy fat and protein, you won't feel hungry and deprived when you make this delicious lunch recipe. 2 hard-boiled eggs
1/2 avocado
1 cup arugula
1 tsp olive oil
pinch salt and pepper

1. Layer mason jar with arugula leaves. 

 

2. Spread half an avocado on top. 

 

3. Add hard-boiled eggs. 

 

4. Drizzle olive oil over salad. 

 

5. Add a pinch of salt and pepper as needed.
