This soup is easy to make and healthy for you as well. The broccoli is full of antioxidants, and the peas provide the protein. And using mint tea instead of a broth makes the soup fresh and light. This is a perfect recipe for a cold night in.

  • 5 cups hot water
  • 1 pure mint tea bag
  • 2 tsp sea salt flakes or kosher salt
  • 4 small garlic cloves
  • 2 1/2 cups frozen peas
  • 3 cups fresh or frozen broccoli florets

1. Pour the water into a saucepan and then drop in the tea bag. Stir in the salt and leave it to infuse for 5 minutes.

2. Take out the tea bag squeezing out all its juices and put the lid on the saucepan. Bring the mint water to a boil

3. Once boiling, add garlic and frozen peas. Keep the lid on and bring the water back to a boil.

4. Add broccoli and cook for about 10 minutes, or until broccoli is soft

5. Let the soup cool a little before blitzing with a stick blender until smooth. Season to taste and serve.
